Signature Ramen - A rich and flavorful ramen that combines traditional techniques with modern flair.

Ingredients

  • 4 large eggs
  • 8 cups chicken or pork stock
  • 1 lb fresh ramen noodles
  • 1 lb pork belly, sliced
  • 4 cloves garlic, minced
  • 2 inches fresh ginger, sliced
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 1 tbsp sesame oil
  • 4 green onions, sliced
  • 2 sheets nori seaweed
  • 1 cup bamboo shoots
  • Salt and pepper to taste

Instructions

  1. Prepare the eggs: Bring a pot of water to boil. Carefully add eggs and cook for 6-7 minutes for soft-boiled. Transfer to ice bath, then peel and set aside.
  2. Make the broth: In a large pot, heat sesame oil over medium heat. Add garlic and ginger, sauté until fragrant, about 2 minutes.
  3. Add the stock, soy sauce, and mirin to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes to develop flavors.
  4. While the broth simmers, cook the pork belly in a separate pan over medium-high heat until crispy and caramelized, about 8-10 minutes. Season with salt and pepper.
  5. Cook the ramen noodles according to package directions. Drain and divide among four bowls.
  6. Strain the broth and ladle it over the noodles in each bowl.
  7. Top each bowl with sliced pork belly, half an egg, green onions, bamboo shoots, and a sheet of nori.
  8. Serve immediately while hot. Enjoy!
